Job Description

The Assistant Bar Manager leads a multicultural team and oversees the shipboard beverage operations for all bars/lounges, outlets and crew bar areas in order to achieve the best level of guest satisfaction and revenue. Supporting the Bar Manager in a great delivery of our standards concerning Service, product and sanitation.

Responsibilities

  • Assists the Bar Manager, ensuring compliance with quality and sanitation standards and procedures in all Bars, lounges and Crew bars
  • Supervises the daily beverage operations in all Guest and Crew Bars as assigned by the Bar Manager
  • Assists the Bar Manager to generate maximum sales and profits by creative work procedures
  • Controls the daily work of Bar service crew in the assigned bars
  • Ensures all bars are fully stocked to par level at all times
  • Ensures Guests are not kept waiting unreasonably for service in any bar or associated area
  • Supports the Bar Manager in his cost control responsibility through close monitoring of the inventory
  • Supervises daily self-inspection checks to ensure all bars, bar pantries, machinery and storerooms meet all Company sanitation and safety requirements

QUALIFICATIONS

  • Fluent English, oral and written. Any additional European language is considered an advantage (Italian, Portuguese, German, Spanish and French)
  • At least 2 years of shipboard experience as Asst. Bar Manager, or Land experience in managing more then one BAR location servicing big crowds
  • You should have a sound knowledge of Bar techniques and cocktailerie
  • Computer literacy, knowledge of Fidelio, Micros and MMS is an advantage
  • Good management and organizational skills
  • Passion about hospitality and customer service driven
  • Revenue orientated
  • Sound knowledge of accounting and cost control procedures

VISA REQUIREMENTS (if any)

  • Valid passport (min 12 Months validity) and when possible a seaman book copy
  • STCW95 certification is compulsory (basic fire fighting, personal survival techniques, elementary first aid, personal security and social responsibility)
  • A recognized medical certification is required before starting to work on board

2. Head Bartender – Explora Journeys

Job Description

The primary responsibility of the Head Bartender is to provide an excellent guest drinking experience and ensure the smooth operations of the assigned venues in line with Explora Journeys policies/procedures, as well as working closely with the Beverage Manager on overseeing the operations for all bars/lounges and crew bar areas in order to achieve the best level of guest satisfaction, revenue and cost control.

Responsibilities

  • Assists the Beverage Manager, ensuring compliance with quality service and product, public health standards in all bars, lounges and Host bars.
  • Supervises the daily beverage operations in all Guest and Host Bars as assigned by the Beverage Manager.
  • Supports the Beverage Manager to generate maximum guest satisfaction, generate upselling opportunities and maintains costs.
  • Attends Guests needs by providing a courteous, friendly, quick, and professional service always.
  • Manages the daily performance of the bar staff in their assigned workplaces.
  • Ensures all bars are fully always stocked to par level.
  • Ensures Guests receive premium service/experience in all venues.
  • Trains team members and supervises the working operations in the assigned bar area.
  • Supports the Beverage Manager in their cost control responsibility through close monitoring of the inventory, spoilage, and recipe adherence.
  • Conducts daily self-inspection checks to ensure all bars, bar pantries, machinery and storerooms meet all Public Health guidelines.
  • Supervise and monitor the correct application of food safety procedures and food quality requirements related to all processes.

QUALIFICATIONS

  • Previous experience in a similar position in an International Cruise Company or in a busy 5-star hotel/resort with an international bar list.
  • Food Safety/HACCP certificate required.
  • Basic knowledge on food safety.
  • Possesses job and product knowledge, including knowledge of cocktail recipes, wine lists and bar setups.
  • Possesses full knowledge of Bar menus, garnishes, and presentations
  • Is aware of all events and activities on the ship and able to communicate to the guests.
  • Ensures compliance with the company alcohol policy.
  • Communicates effectively with the senior management.
  • Possesses ability to lead and make decisions.
  • Experienced in coaching.
  • Must be cost and quality conscious.
  • Computer literacy, knowledge of Fidelio/Otalio, POS and Crunchtime is an advantage.

3. Beverage Manager- Explora Journeys

Job Description

Leading a multicultural team, the Beverage Manager is responsible for the shipboard beverage operations for all bars/lounges, outlets and crew bar areas. Manages the financial and Public Health aspects of beverage operations in order to ensure compliance with standards/procedures and optimum guest satisfaction.

Responsibilities

  • Leads the beverage services in a professional manner, focused on guest experience, quality assurance and cost control is delivered in every outlet.
  • Ensures that premium management, delivery and storage of all beverage products to maintain the high quality of our products. Monitors bar set ups, service and presentation to ensure guest satisfaction;
  • Supervises Bar team members, supporting and coaching them to enhance their performance. Evaluates their skills and performance to properly manage our succession planning and identify where additional coaching may be required;
  • Complies with Company beverage service standards and adheres to our Public Health Protocols.

Qualifications

  • Fluent English, oral and written. Any additional European languages are considered an advantage (Italian, Portuguese, German, Spanish and French)
  • Professional School diploma from a Hospitality/Bar School/Bar Training Academy is an advantage
  • A minimum of 4-years experience in the position with diverse luxury Hospitality and/ or luxury Cruise lines
  • Very good knowledge of MS Office package
  • Knowledge of Fidelio/Otalio, Micros, and Crunchtime is an advantage
  • Sound knowledge of accounting and cost control procedures
  • Previous experience in Start Ups/Pre-openings is an advantage

4. Bartender/Mixologist/Whiskey Specialist – Explora Journeys

Job Description

In line with Company guidelines, the Bartender, Mixologist and Whiskey specialist provides an excellent guest beverage experience while maintaining revenue generation and cost control.

  • Attends our Guest’s needs by providing a premium, courteous, friendly,  and efficient service at all times
  • Continuously strives to create unique beverage creations
  • Leads Bar Servers in their assigned venue
  • Ensures compliance with all beverage related service standards, inventory management and public health compliance.

Qualifications

  • Fluent English. Knowledge of other languages is an advantage
  • Secondary school graduate
  • Minimum 2 years’ experience as Bartender in the cruise industry or an international 5-star Hotel/Resort
  • nowledge of classical and modern cocktails and mixology skills
  • Knowledge of global whiskies is an advantage
  • Knowledge of global cigars is an advantage
